Who misses tuna? I do. I remember going to my aunties and eating crackers with tuna. A second memory would be my mom making tuna sandwiches and I would creatively add hot Cheetos for a kick! So, you might be wondering what can come close to a mock tuna sandwich? Chickpeas! They are high in protein and perfect for an alternative to tuna! This easy Vegan Chickpea “Tuna” Salad Sandwich is perfect for a lazy day. It is so easy that you don’t want to cook or use gas or stove. Also, this recipe calls for my best vegan garlic lemon aioli sauce that makes it 10x better than just adding plain mayo.

What are Chickpeas?

Chickpeas, also called Garbanzo beans, are in the legume family. They are different from the regular pinto and black beans. The texture it has is creamy and can also be a buttery texture. They are wildly popular in Mediterranean dishes, like falafels and hummus.

Chickpeas are a nutrient based legume that is full of folate and iron! It is a great plant based protein and is another plant that has lots of fiber! When eating the easy vegan chickpea tuna salad, it is best to eat it for a cold sandwich

Pickles

Pickles have this sour and bitter taste to it which helps balance the nutty and sweet taste from the maple syrup and apples I included into the vegan chickpea “tuna” salad.

Apples

My mom always added apples to her tuna or chicken sandwich. It is sweet and adds a great crunch to the “tuna” salad.

How to make Vegan Chickpea Sandwich

For this recipe I used a food processor because it decreases the time and effort to smash it by hand with a fork. Utilizing a fork would take 5-7 minutes depending how smashed you would like. Using a food processor for the chickpea tuna alternative will speed up the process because it only calls for; pulsed 2 times for 10-15 seconds and voilà.

The rest of the recipe is adding the ingredients and cutting the veggies to add into the easy vegan chickpea sandwich.

On to the easy vegan chickpea sandwich recipe!

Easy Vegan Chickpea Sandwich

Super easy vegan chickpea sandwich that is an alternative for a tuna sandwich. Made with the best vegan garlic lemon aioli sauce. It is undeniably good with its sweet and delicious taste of roasted garlic.

Equipment

  • Food processor
  • cutting board
  • knife
  • measuring spoons and cups

Ingredients
  

  • 1 can chickpeas
  • ½ of a zucchini
  • 1 small apple
  • 2 tbsp. vegan lemon garlic mayo aioli
  • ½ tbsp. maple syrup
  • ½ tsp salt
  • 2 tbsp. sunflower seeds no shell
  • 1 tsp mustard
  • 1 tbsp. Lemon or 2 tbsp. roughly a half a lemon
  • ½ tsp dried rosemary
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp onion powder

To serve

  • 1 tomato
  • 3 lettuce leaves
  • ½ cucumber
  • 6 slices bread can be gluten free wrap or bread (bread srsly)

Instructions
 

  • In a food processor, add in the chickpeas, mayo, maple syrup, salt, mustard, lemon, dried rosemary, garlic powder, paprika, and onion powder. Pulse 4-5 times lasting about 5 seconds each pulse. Transfer to a bowl when done.
  • On a cutting board, chop the zucchini and apple into bite sized cubes, centimeter in diameter.
  • In the bowl with the chickpea mixture, add in the chopped zucchini, apple, & lastly the sunflower seeds.
  • Serve with bread with a slice of tomato, cucumber and lettuce.

Notes

  1. To avoid the chickpea salad to fall out of the sand which, use the lettuce as a pocket for the filling. 
  2. You can opt out the bread with tortilla, to create a wrap. 
  3. I wanted to add some seeds to it, and I had sunflower seeds sitting in my pantry. So any nut or seed of your choice can work. For ex. Cashews, pine nuts, pumpkin seeds and more. 
  4. If you use a high speed blender, the turnout will be a smoother consistency. When I use a blender for this recipe I barely let it mix for 6 seconds. I like it chunky and smooth. If you blend it more than 10-20 seconds it will initiate the process of making hummus, and we don’t want that!!! 
  5. if you are making the best vegan garlic lemon aioli sauce, then it is about 9 full tablespoons/ 3/4 cup. So there will be about 7 tablespoons left of aioli.
