Enough to make for 5-6 full servings of salad.
Enjoy this balanced & simple chickpea salad with a homemade dressing I partnered with. This vegan avocado ranch dressing is also really easy to make and so much better than store bought dressings! Dressings we buy from stores are made with preservatives or unwanted ingredients we can’t even read! As it is said, if you can’t read or point out the ingredients in the list then don’t get it!
How Simple is this chickpea salad?
I did not just throw some chickpeas into this salad. I baked it with good old fashioned potatoes, and with the best kind of seasonings! They need to bake for a while, but all you need to do is to flip them once after the 20 minute mark is done. Wait for 20 more minutes and the salad is done!
While waiting for the veggies, make the vegan avocado ranch dressing! You can either buy pre-washed lettuce or if you are zero waste, buy the lettuce without any plastic covering & wash it yourself. Lastly, cut any vegetables or fruits you would like to add in the salad, and the baked veggies should be ready in any minute!

Simple Chickpea Salad
Equipment
- 2 baking pans
- measuring cups and spoons
- knife
- cutting board
- colander
Ingredients
veggies
- 3 russet potatoes
- 15.5 oz. chickpeas garbanzo beans
- 1 bundle green lettuce
- 1 cucumber
- 2 tomatoes
seasonings & spices
- 1/2 tsp black pepper
- 1 tsp onion powder
- 1.5 tsp cumin
- 1/2 tsp chili powder
- 1.5 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp rosemary
dressing
- 1 serving vegan avocado ranch dressing
optional
- 3 oz. seeded sprouts
Instructions
- Cut the potatoes into small cubes (close to the size of chickpeas). Rinse the potatoes and chickpeas in a colander with clean water, until no bubbles. On a baking pan, throw in the chickpeas and potatoes. Use two baking pans if needed.
- Next, add in the spices & seasonings (adjust to your preference) to the potatoes & chickpeas. Bake at 400 degrees Fahrenheit for 40-45 minutes total. When the 20 minute mark is done, flip them or mix them around. Bake for the rest of the time.
- While the potatoes & chickpeas are baking, wash and cut the lettuce, cucumbers, and tomato. After, make the vegan avocado ranch dressing (or if you didn't have time, chose any dressing you prefer).
- Serve and construct everything into the bowl!
