Simple Chickpea Salad
Chickpeas are jam packed with so many nutritional health benefits and we need more of them! Especially when you pair them with potatoes! Also, topped with my favorite vegan avocado ranch dressing!

- 3 russet potatoes
- 15.5 oz. chickpeas garbanzo beans
- 1 bundle green lettuce
- 1 cucumber
- 2 tomatoes
seasonings & spices
- 1/2 tsp black pepper
- 1 tsp onion powder
- 1.5 tsp cumin
- 1/2 tsp chili powder
- 1.5 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp rosemary
Cut the potatoes into small cubes (close to the size of chickpeas). Rinse the potatoes and chickpeas in a colander with clean water, until no bubbles. On a baking pan, throw in the chickpeas and potatoes. Use two baking pans if needed.
Next, add in the spices & seasonings (adjust to your preference) to the potatoes & chickpeas. Bake at 400 degrees Fahrenheit for 40-45 minutes total. When the 20 minute mark is done, flip them or mix them around. Bake for the rest of the time.
While the potatoes & chickpeas are baking, wash and cut the lettuce, cucumbers, and tomato. After, make the vegan avocado ranch dressing (or if you didn't have time, chose any dressing you prefer).
Serve and construct everything into the bowl!
