The first time I tried an aioli sauce was at my first job at a poke place, Okashi Fusion. It was a bacon aioli sauce that was made for a sauce to cover the entire bowl. I was not vegan at the time so the 10 sauces they had, I tried them all! Most of my sauce creations are influenced by their recipes. There was this bacon aioli sauce, and it was so interesting. It had the kick, the spice, and the sweetness. Obviously I’m vegan now so bacon is excluded from this vegan lemon garlic aioli recipe. I didn’t want to add any sweetness to this sauce so I carried on with a pungent and minimal sour taste to this vegan aioli sauce.

What makes this vegan aioli sauce shine
In this YouTube video I have seen Merle O’ Nele creatively baking the garlic. She cut the tip of the garlic head, topped it with some oil and a dash of salt. So, I wanted to try that out and see if it’s worth the step from just using raw garlic for this recipe. IT WAS WELL WORTH IT! This recipe is tend to be a more garlic taste, so if you are a lemon person you would want to buy two lemons for this recipe!

Steps for this easy vegan garlic lemon aioli
This recipe calls for only a nutri-bullet, a pan to roast and bake the garlic, and measuring cups/spoons. The garlic will broil or bake in the oven for about 10 minutes or so. That is the hardest part, really.
When the garlic is ready, let it cool down while adding the other ingredients into the nutri-bullet. Blend until smooth.

Best Vegan Garlic Lemon Aioli
Equipment
- nutri-bullet
- measuring cups and spoons
- Pan
Ingredients
- 9 medium cloves of garlic
- 3/4 cup vegan mayo
- 1/4 of Serrano pepper or jalapeño
- 3 tbsp. lemon juice
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Cut the tip of the garlic head (Please refer to the pictures above). Place it on a pan and bake in an oven or mini oven for 10 minutes at 400 degrees Fahrenheit.
- In a nutri-bullet, add the oven baked garlic, vegan mayo, 1/4 of a Serrano pepper, juice of a lemon, salt, and pepper.
Notes
- One lemon is worth 2 tablespoons of lemon juice. Buy 2 lemons if you like the sauce to be lemon-y. The garlic is the most dominant flavor in this vegan aioli sauce.
- The nutri-bullet is a crucial device for mixing the garlic into the mayo. If you don’t have a blender this recipe might not work.
- There is about 9 tablespoons worth of this sauce.
