Do you remember waking up in the morning to the smell of pancakes? I don’t know why but pancakes always remind me of my childhood. It’s must be those special breakfast foods that had some more effort and love put into it. The shape, the size, and the fluffiness were the expectations of a great pancake.

If you miss the feeling of the taste of great pancakes and are looking for a healthy and tasty alternative, you are in the right place! These pancakes are quick to whip up as a one bowl recipe and only need 5 ingredients and 4 optional ingredients if you want a more traditional version of a pancake recipe.
Do I need all of the 9 ingredients?
If you only have the 5 key ingredients it will still taste delicious with some additional toppings like fruit or maple syrup! The other ingredients are just for those who want personality for their breakfast!
Many times out of the week I am busy, I tend to only use those 5 ingredients anyways! The extra 4 optional ingredients add a pop of texture and taste.
I probably make this pancake recipe a couple times a week. It never gets old and I love getting my nutrients in the morning while still having a traditional breakfast meal.
So, what’s the healthier alternative to eggs? A flaxseed egg. It’s easy to make and boosts the amount of omega-3’s in my diet!

Why oat flour?
Oat flour is a great option if you are looking for a nut-free and gluten-free flour. Oat flour is a flour you can make at home by adding the oats in a blender or food processor. It is convenient and easy!
The “milk” I used for the pancakes was oat milk, but anything that you have will do!

Serves 8 3 ½ inch long pancakes
This is my all time favorite pancakes because they are:

- 1. shows the flaxseed egg, sometimes called “Flegg”, after the 5 minutes are up.
- 2. reveals the banana mashed together with the Flegg.
- 3. shows all the wet ingredients together.
- 4. I used a sifter, but it is not required to follow. You will still have a great pancake if you decide to skip this step.
- 5. This is where I added my vegan chocolate chips.
- 6. I used a big enough pan to make four pancakes.
- 7. You want to wait until the pancake produces bubbles before flipping it.
- 8. Once you turned it around, it should look nice a golden brown!
And Voila! You get 8 pancakes that are about 3 inches big!
I prefer cooking the 1-Bowl Vegan Banana Oat Pancakes on a non-stick pan to keep this recipe oil-free. However, if you would like to use some coconut oil, it will add a crisp texture to it! Including some vegan chocolate chips are a must for me, but of course optional for you! I usually eat it with fruits for the sweet component in place of syrup but if you do eat it with syrup, I would suggest maple syrup as it is healthier than those artificial syrups.
On to this 1-Pot Vegan Banana Oat Pancake Recipe!
1-Bowl Vegan Banana Oat Pancakes
Equipment
- Pan
- spatula
- bowl
- fork
Ingredients
- 2 Tbsp. of Flaxseeds
- 1/2 cup of Oat milk u0026 4 Tbsp. of Oat Milk for Flaxseed Egg
- 1 medium sized ripe Banana
- 1 tsp of Cinnamon for taste
- 1 cup of Oat Flour
- Optional Ingredients
- 1/3 cup of Vegan Chocolate Chips
- 1/2 Tbsp. of Coconut Sugar if you do not use chocolate chips
- 1/2 Tsp of Vanilla Extract
- 3/4 Tsp of baking powder for more of a fluffy pancake
Instructions
- Use a big sized bowl to mix everything. Add the flaxseeds in the bowl with 4 tbsp of milk and stir with a fork or whisk to combine the two. IMPORTANT: Wait for 5 minutes to thicken into a flaxseed egg.
- Then add the banana and mash it with a fork.
- Combine the ½ cup of milk, vanilla extract, and cinnamon. Stir well. After, add the oat flour, coconut sugar, and baking powder. It is optional to sift the flour. Next add the vegan chocolate chips.
- Heat up the pan in the middle of low and medium heat. Wait for a few minutes for the pan to warm up. NOT HIGH, they will burn. Put on the coconut oil if using a stainless steel pan, but if you are using a non-stick pan it is optional to use oil.
- Grab some of the batter with a cup and leave it on for about 4 minutes or if they start creating bubbles on the top. Leave them on the pan until both sides are golden brown or to your liking.
- If you want to add any protein powder, go ahead!
- Serve with any additional toppings like maple syrup, fruits or any toppings you would like, enjoy!
