- 2 Tbsp. of Flaxseeds
- 1/2 cup of Oat milk u0026 4 Tbsp. of Oat Milk for Flaxseed Egg
- 1 medium sized ripe Banana
- 1 tsp of Cinnamon for taste
- 1 cup of Oat Flour
- Optional Ingredients
- 1/3 cup of Vegan Chocolate Chips
- 1/2 Tbsp. of Coconut Sugar if you do not use chocolate chips
- 1/2 Tsp of Vanilla Extract
- 3/4 Tsp of baking powder for more of a fluffy pancake
Use a big sized bowl to mix everything. Add the flaxseeds in the bowl with 4 tbsp of milk and stir with a fork or whisk to combine the two. IMPORTANT: Wait for 5 minutes to thicken into a flaxseed egg.
Then add the banana and mash it with a fork.
Combine the ½ cup of milk, vanilla extract, and cinnamon. Stir well. After, add the oat flour, coconut sugar, and baking powder. It is optional to sift the flour. Next add the vegan chocolate chips.
Heat up the pan in the middle of low and medium heat. Wait for a few minutes for the pan to warm up. NOT HIGH, they will burn. Put on the coconut oil if using a stainless steel pan, but if you are using a non-stick pan it is optional to use oil.
Grab some of the batter with a cup and leave it on for about 4 minutes or if they start creating bubbles on the top. Leave them on the pan until both sides are golden brown or to your liking.
If you want to add any protein powder, go ahead!
Serve with any additional toppings like maple syrup, fruits or any toppings you would like, enjoy!
Swap out the oat milk with any kind of nut, rice, hemp, or coconut milk. If you have a bag or container of oats, just reach out for a blender and blend it until it is nice and powdery. That's what I do all the time with a blender or nutri-bullet, instead of buying a store bought oat flour.
For a pancake recipe that is gluten free, it may not be fluffy and crispy like a gluten flour pancake. However, adding baking powder will add a fluff to it when it is fresh off the pan. If the pancakes have been sitting out for a while, they will lose the fluffiness. Although, they are super moist and delicious! It is a great alternative to a healthy and nutritional pancake, that still creates an enjoyment of time!
