I’m on this gluten free, soy free, refined sugar free, and corn free diet. I am healing my eczema by food, instead of rash creams or antibiotics. I see the difference when strictly eating an allergen free diet, but still eating some nuts. There is improvement on my finger every other day by eating a clean & whole based vegan diet. So, I am happy to share a high protein vegan taco that is allergen free. This luscious high protein vegan taco recipe is great for people who are allergic to nuts as well! If you are wondering, the tortillas that I used for this high protein vegan taco recipe is from Siete. They do the job and has clean & healthy ingredients! These Siete cassava flour tortillas are gluten free, paleo, soy free, and refined sugar free! Which is amazing! The best way to cook this is just for a few seconds on a hot pan because if you cook it longer it gets hard.

What is important for making High Protein Vegan Taco
Cooking jackfruit was so confusing and difficult when trying to make recipes with it, but I think I have mastered it! One thing you need to know is to soak it in flavor and dehydrate the moisture from it by cooking it longer. I love how jackfruit is gluten free and soy free, that means I can eat it all the time! If you have extra time, you can use a dish towel or a cheese cloth to squeeze the liquid from the jackfruit before cooking it. Jackfruit is not high protein mock meat, but it does add incredible texture and flavor. Sometimes we just need a break from beans and legumes.
Where is the protein coming from?

On to the high protein vegan taco recipe
Luscious High Protein Vegan Taco
Ingredients
- 1 packet siete cassava flour tortillas
- 15 oz. white beans
- 2 potatoes
- 1/4 cup avocado oil for frying potatoes
Guacamole
- 2 avocados
- 2 limes
- 2 tbsp. Cilantro
- 3 tbsp. Red onion
- 1 Pinch of salt
- 1 Pinch of pepper
Fresh Pico De Gayo
- 3 Tomatoes
- 3 tbsp. red onion
- 2 tbsp. Cilantro
- 1/2 lime
Chickpea Cheese spread
- 13 oz. chickpeas
- 2 tbsp oil
- 1/4 cup water
- 1/2 tsp salt
- 1/2 tsp paprika
- 1/4 tsp chili powder
- 1/2 tsp garlic
- 1/2 tsp onion
- 2 tsp nutritional yeast
Seasoned Jackfruit
- 1 can jackfruit
- 1/4 + 1 tbsp cup ketchup
- 1 tsp paprika
- 1 tsp cumin
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp chili powder
- 1 tbsp maple syrup
- 1/4 cup coco aminos
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 3 tbsp salsa optional
Instructions
- Cut the potatoes in bite sized pieces and then place them in a colander to rinse off the starch.
- In a colander, drain the jackfruit. You can either put the jackfruit in a food processor and pulse 5 times until they look like shredded chicken or do it by hand. This will add 5-15 minutes to shred the jackfruit by hand.
- Once the potatoes are dry, pat them with a clean reusable towel. In a medium or large pot on medium heat, add the oil and fry the potatoes or baked them on two pans. Cook until golden brown. Takes about 30 minutes or more.
- In a medium/large pan on medium heat add the jackfruit and the seasonings. Cook for 20-30 minutes so that the jackfruit is dry but still chewy and flavorful. Best to cook without a lid so that the jackfruit can dehydrate. Best to flatten the jackfruit on the pan so it cooks thoroughly. Just make sure it does not burn, mix every 3-5 minutes or so.
- While the jackfruit and potatoes are cooking you can wait until they are done, or prepare the Pico de Gayo and guacamole. For the Pico, cut the tomato, cilantro, & onion into small cubes. Mix in a bowl with half a lime. For the guacamole, cut the cilantro and onion and add it to the mashed avocados, then add the juice of the limes.
- For the chickpea spread, in a blender add in all the ingredients and blend for 2-3 minutes until it is smooth and no pieces of chickpea exist. The ingredients are right under the "chickpea cheese spread".
- Once the potatoes and jackfruit are done, you can heat up the tortilla in either pan. Spread the chickpea spread on the tortilla, and then add the toppings.
