I haven’t eaten pork for about 2 years now & let me tell you, its a great alternative to replace pork! It is not slimy folks!

Tips for Vegan Nachos
- Jackfruit is naturally slimy and wet. What we need to do is to dry them out while keeping them tasty and moist enough to chew. Baking is crucial for drying out the jackfruit so it can live up to the texture of pork. Jackfruit does a great job disguising the meat like characteristics of pork!
- To add more moisture to these nachos are either vegan cheese or some sauce. I didn’t have cheese but I had some mayo, sriracha, and maple syrup. So I made vegan spicy mayo to add on top and it was so worth it!! See notes for vegan spicy mayo recipe.
- Jackfruit is just like tofu, you must season and saturate it with a tang. This recipe calls for a lot of seasonings and spices to do the trick. Just like any meat/pork, they are also seasoned and played around with to get a desired “taste”. Making a tomato, onion, & garlic mixture is my secret weapon & helps bring out a lot of pungency to the nachos. It is a whole different level!
- Throw in a lot of fresh toppings on these jackfruit vegan nachos! You know what kind of toppings you would like on your nachos so go crazy! Other toppings I would have added: radishes, tomatillo, corn, beans, bell peppers, etc.

Where to get Canned Jackfruit
The places where I have seen unsweetened Green Young Jackfruit was from:

The brands that I have seen are Trader Joes, Native Forest, & Chaokoh. DO NOT GET JACKFRUIT IN SYRUP OR SUGAR.

Jackfruit Vegan Nachos
Not pork, not soy, it's Jackfruit everyone! So tasty and affordable to make! How I marinated the jackfruit is incredibly saturated and goes well with these nacho chips! I didn't add it to the recipe, but feel free to add some cheese on top of it!! Enjoy 🙂
Equipment

Ingredients
Veggies/fruits
- 32 oz. green jackfruit Unsweetened! No sugar!
- 4 garlic cloves
- 1 potato
- 2 avocado
- 3/4 medium onion chopped 1/2 for jackfruit/ 1/4 for marinate mixture
- 5-6 small/medium tomatoes
- 1/4 cup Cilantro
- 2 limes
- 1/4 cup red cabbage optional
Spices/Seasonings
- 1 tbsp. ground cumin
- 1 tbsp. paprika or smoked paprika
- 1 tbsp. garlic powder
- 1 tbsp. onion powder
- 1/2 tbsp. chili powder
- 1/2 tbsp. cayenne pepper
- 1/2 tbsp. turmeric
- 1/2 tsp pepper
- 1/2 tbsp. any vegan chicken seasoning optional
Base/Chips
- 14 oz. tortilla chips white corn gluten free
Oils/Liquids
- 4 tbsp. olive oil to fry potatoes
- 1 tbsp. tamari gluten free soy sauce
- 2 tbsp. maple syrup
- 1 tsp liquid smoke
- 4 tbsp. ketchup 2 tbsp. for jackfruit/ 2 tbsp. for pico de gayo
Instructions
- Rinse & drain the water from the jackfruit and pat dry. Shred the jackfruit with your hands or with a fork in a bowl. Cut 1/2 of an onion. *Save other 1/4 of the onion for pico de gayo.*
- Set temperature to 400 degrees Fahrenheit for jackfruit to bake.
- On a pan on medium heat, cook the jackfruit with oil, salt, and add in the seasonings- cumin, paprika, turmeric, pepper, garlic powder, onion powder, chili powder, and cayenne pepper. Throw in only half onion chopped. Next, add the liquid smoke, maple syrup, tamari, and ketchup. Let it cook for 5-10 minutes on low heat. (make the marinate mixture while it is cooking).
- Marinate/Mixture: In a nutri-bullet or any blender you have, add 3 chopped tomatoes, 1/4 of an onion, & 4 cloves of garlic. Then add it to the jackfruit and let it sit in for 2 minutes.
- Transfer the jackfruit on to a baking pan and bake for 20 minutes on each side, a total of 40 minutes.
- While the jackfruit is baking, cut the potatoes into small cubes and fry the potatoes in same frying pan used for jackfruit. Fry until golden brown and add salt if you want. Set aside in a bowl when done.
- Either wait until the potatoes are done or make the guacamole and pico de gayo while the potatoes are frying. Guacamole: mash or cut into cubes, 2 avocados and juice from 1 lime (if you like more lime add 2)?Pico de gayo: 1/2 onion, 2 tomatoes, juice of 2 limes, 1/4 cup cilantro. Cut them into half inch cubes, or add them into a food processor) Cut the red cabbage into strips if you bought the item.
- Serve with gluten free tortilla chips, guacamole , fried potatoes, pico de gayo, red cabbage and most importantly the jackfruit! Enjoy 🙂

- Vegan Spicy Mayo: Simply add (1) 2 tbsp. sriracha, (2) 1/4 cup mayo, (3) 1 tbsp. maple syrup (optional).

Ohhh, these nachos look amazing! I’m not a big fan of jackfruit, but I still have hope that one day I will try something that will convince me. Maybe this will be it!
I didn’t like jackfruit before either. When I went to a vegan food festival I got a jackfruit sandwich and didn’t like it. The main thing is to squeeze as much of the water from the jackfruit! You can use a cheese cloth if you can!
