What’s so great about these lettuce wraps?

This is what a low calorie high protein dish looks like! Introducing Vegan Thai Lettuce Wraps that are healthy and fulfilling! These lettuce wraps have a great source of sweet and savory components. Not only are they easy to make, but they beat the classic BJs chicken lettuce wraps. This can also be a vegan ground tofu dish to put on top of rice!

People might think finding a vegan recipe to make that has low in calorie but high in protein can be semi-challenging for a person following a plant based. Conversely, many think a vegan diet it is challenging to find low carb & low calorie based meal because its vegetables, legumes, grains, and fruits.

It is new to us, but the evidence is here to know.

Tofu and tempeh are not high in calorie, they are high in protein. Don’t get me wrong, it’s healthy to follow a high carb diet in moderation. A mixture of low calorie, high carb, to high protein packed meals are feasible and great to change it once a while.

This Thai lettuce wrap filling is a perfect way to put over rice. I love rice, but I need to take a break from it.

Lettuce wraps aren’t just great when it is warm, but it is also appetizing when it is cold! It is a great way to ditch the heavy carbs for a few days.

Allergic to peanuts?

Peanuts are a popular source of protein but a familiar food that people are allergic to. So, switching out the peanut butter with cashew or almond can work! I personally did not try that yet, so let me know how it turns out!

Allergic to nuts?

If you are entirely allergic to all nuts, don’t worry! This recipe is still amazing without the peanut butter!

What kind of lettuce works better?

When making these lettuce wraps, I go for butter lettuce. Unfortunately, the store did not have them on stock. However, any lettuce will do! I used green leafy lettuce and it still did a perfect job.

What does it taste like? 

Thai lettuce wraps are accompanied by sweet chili sauce. Sky valley sweet chili sauce is certified vegan. I used blue dragon that is vegan as well. The veggies add a nice crunch and flavor to it. Sautéing the onions for a good 3 minutes with water help caramelization, which adds great amounts of flavor.

Sauté the onions for 3 minutes on medium to high heat for a nice brown color.

Steps into making these delicious lettuce wraps!

Always, always drain the excess water out of the tofu. It is a crucial step for this recipe because it can get to liquidly from the sauce. The first step is to wrap the tofu with a towel, gently press it. Afterwards, place a plate on top of it. Leave it there until adding it to the pot to crumble it into pieces.

I like to find the most effective and time efficiency way to cook my food. I have many errands to do in a day, and so creating an organized place to cook helps time management around the kitchen. Most of all technique.

Cutting the vegetables in order like this: (1)bell pepper, (2)zucchini, (3)carrot, and (4)red cabbage, (5) onion, and (6) garlic means that you only need to clean the cutting board one time until finished with cutting the garlic.

Every time I buy lettuce or greens, I wash it with warm water. Let it dry on a clean reusable towel.

Can I cook with water and ditch the oil?

Of course! Caitlin Shoemaker, a popular vegan Youtuber, showed a way to cook without oil! Using water for cooking is tricky but actually easy. It may be time consuming but its definitely a time to try something different, right? Normally using oil to sauté or cook food can be faster or it gives a crispy and airy texture. Cooking with onions when adding a little bit of water at a time and leaving it on the pan for 3 minutes or more on medium to high heat can get a brown color.

Vegan Thai Lettuce Wraps

I always enjoy this meal either with lettuce or rice. I am a seaweed kind of girl, and it's a great addition on top. The important part for this recipe is to only add the red cabbage for the last 5 minutes of cooking so it keeps its vibrant purple color. Enjoy!

Equipment

  • bowls

  • large pan or pot
  • spatula

Ingredients
  

  • 1 head lettuce

Filling

  • 12-14 oz. extra firm tofu 1 tofu block
  • 1 red bell pepper
  • 1 zucchini
  • 1/2 an onion
  • 5 cloves garlic
  • 4 oz. Carrot
  • 8 oz. Red cabbage
  • 1 tsp pepper
  • 1/2 tsp salt
  • 3 tbsp. sesame oil

Sauce

  • 6.4 oz. Sweet chili sauce
  • 1 tbsp. Peanut butter
  • 1/2 tsp Ginger powder
  • 1/2 tbsp. sriracha
  • 2 tbsp. coconut aminos
  • 1 tsp rice vinegar

Garnish

  • 5 tbsp. Peanuts
  • 1/4 cup Cilantro

Instructions
 

  • Press Tofu:
    Gently squeeze the tofu with a clean reusable towel to drain out the water. Place a plate or heavy object on it while it is wrapped in the towels.
  • Cut:
    Cut the bell pepper, zucchini, carrot, red cabbage, onion, into bite sized pieces. Cut the garlic into minced size.
  • Sauce:
    Mix the sweet chili sauce, peanut butter, ginger powder, and sriracha. If it isn’t mixing, add 1 tbsp. of hot water.
  • Cook:
    In a big pan or pot on medium heat, sauté the onion in oil until it is translucent. Then add the garlic in and stir for a minute.
  • Crumble the tofu into the pot and add a 1 tbsp. of oil or water. Leave for a few minutes.
  • Cook:
    Throw in the veggies and mix, except the red cabbage and cook for 5 minutes with a lid. Stir in the red cabbage and the sauce, cook for another 5 minutes.
  • Serve:
    Wash the lettuce and place the filling into the lettuce. Feel free to add any toppings you like. I added some cilantro and peanuts, enjoy!

Notes

  • If you are on a soy free diet, replace tofu with lentils or chickpeas. Make sure they are cooked before adding it with the step to cook it with the onions and garlic.
  • If you are allergic to coconut aminos, add 1.5 tbsp. of soy sauce.
  • If you do not like some of the veggies I have chosen, add in the veggies you think would be good.
  • If you are on a oil free diet, add 1 tbsp. of water to sauté the onions, garlic, and veggies. Keep adding 1 tbsp. of water when the onions or veggies are sticking onto the pan. It takes longer when cooking with water, compared to oil. Bake the tofu or air fry it to obtain texture for 25 minutes, 11 minutes on each side.
